Sourdough Bread Baking
A wild yeast, a patient schedule, and a loaf that tastes of where you live.
But first, a little context and history...
All bread was sourdough until 1857, when Pasteur's work let commercial bakers isolate a single yeast. For the previous 4,000 years, every loaf in Egypt, Rome, and medieval Europe was raised by a wild culture of yeast and bacteria captured from the air.
A sourdough starter is a living thing — a colony you feed, name, and sometimes bequeath. It carries the microbial signature of your kitchen; a San Francisco starter tastes different from a Berlin one because the air is different.
Baking sourdough is a negotiation with time. You cannot rush fermentation; you can only schedule your life around it. For the empty nester, that constraint is a gift.
“A starter is the only pet that pays rent in bread.”

Day 15 and the crumb is finally opening up. The fridge is my best teacher. #EmptyNexxter
My starter is named Ruth. She smells like a barn and I love her.
